I’d long dreamt of exploring northern Spain, often called ‘green Spain’ for its lush landscapes, where misty mountains rise above vast, vibrant greenery. The air was thick with the scent of earth and sea, and I could almost taste the soul-soothing Fabada Asturiana, rich and hearty, made with the region’s prized alubias blancas. Every bite was a reminder of the land's abundance. 

One of the highlights was trekking through the Picos de Europa National Park, where towering peaks and jaw-dropping vistas left me in awe. It’s one of the most breathtaking places I’ve ever been. Amidst this wild beauty, the charm of tiny Catholic churches perched on village hillsides or nestled in caves carved into mountain faces was like stepping back in time, adding layers of history and culture to the landscape.
